...3.14...a.k.a. Pi(e) Day...

...first of all...I wanted to show you some of the cuteness from the Easter Egg Hunt at the Church yesterday...
...lots of fun and sugar was had by all... ...but today has to be all about Pi(e)...as in years past...here...here...here...and here
...and so...in honor of Pi(e) day 2016...I made some cute little tartlettes filled with Vegan Coconut Cream...
...I just made my super easy and flaky vegan pie crust...

Super Easy Pastry Crust:

1 3/4 c. flour - I used White Lily All Purpose
1/2 c. oil
3-4 tbsp. cold water


whisk oil and water together - it will emulsify and make a thick liquid - just pour that into the flour, mix well and roll out between my pie crust helper...and for these little tarts I cut the dough with a little flower shaped cookie cutter...
...then I draped the cut out over a muffin tin turned upside down...
...baked until crispy and lightly browned...
...and filled with vegan coconut cream pie filling...
...topped with a little more coconut...
...and they were ready to serve...
...so cute and sweet and delicious...

...and I plan to make a Vegan Quiche Lorraine for dinner tonight...maybe I'll come back and post about it...if not...then tomorrow...
