...Fiesta Guacamole...

...y'all know I'm a Mexican food junkie...

...and my favorite Mexican restaurant has an appetizer they call Fiesta Guacamole...

...I order it every time...

...and as often happens...I set out to make my own version of Fiesta Guacamole...
...it starts as all guac does with some nice ripe avocados...
...and I used my neat little avocado tool that Mom gave me for Christmas...
...to neatly and quickly scoop out the avocado and slice it in one fell swoop...
...then I just mashed it up with a fork...
...added a little bit of salt...and I mean a little bit because of my next secret ingredient...
...which is this little cilantro cube...from Knorr...just crumbled up in the guacamole...it adds so much flavor...and I love cilantro...
...squeeze some fresh lime juice...
...give it a stir...and the guacamole base is done...
...so I put that in a pretty painted Mexican bowl...
...add some salsa...
...fresh tomato...
...and top with some chopped green onion...
...and a few chopped jalapenos...not too many...I don't like it too spicy...
...serve with some tortilla chips...of course...
...so...so delicious...

  2. I love avocados. Years ago we stayed in a cabin in an avocado orchard in Spain. The ground was littered with windfalls and we ate mountains of them. About three weeks later we noticed that out skin was amazingly soft! Splendid things.
