...Zucchini Bread in the Summertime...

...summer is definitely winding down now...and this will probably be the last zucchini of the season...

...so...I thought I'd make Zucchini Bread...
...for some strange reason...I never seem to make Zucchini Bread in the summertime...
...I always freeze shredded zucchini and get it out in the middle of winter and bake the bread then...
...you may remember that this is the recipe that a much younger Scout chose to put into his Third Grade Cookbook...which was given to all the Moms for Mother's Day that year...
...definitely delicious...and I think I should make it in the summertime more often...

ZUCCHINI BREAD

1/2 cup flax seed goo
2 c. sugar
2 c. grated zucchini
3 tsp. vanilla
1 c. oil
1/2 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
3 c. flour
2 tsp. cinnamon

Mix flax seed goo and sugar, then add all the other ingredients. Divide into two bread pans which have been sprayed with cooking spray - or lined with parchment paper. Bake 50 to 60 minutes at 350 degrees.
