...Vegan Lox...

...can you tell where this is going...(well...you can ignore the bowl of steel cut oats cooling on the stove back there)...but...

...there's this carrot lox craze on the vegan interwebs...and as usual...I'm late to the party...

...but as soon as I saw it...I knew I wanted to try it...

...now...I've never had lox in my life...and didn't even really know what they were...I'd heard the terms bagel and lox...but I'd never given it much thought...but y'all know I love me some bagels...and vegan cream cheese...
...first you make a layer of kosher salt in a casserole dish that will accommodate your carrots...I'm using my cute little veggie roaster from Williams Sonoma...

...just wash your carrots really well...and put them on top of the salt...making sure that they are not touching the bottom or the sides...
...and then completely cover them with more salt...
...this took about 1 and 1/2 containers of kosher salt...
...and then you bake them for about an hour...and then turn the casserole upside down and dump out the carrots...the salt will kinda be hard and chunky...so just chisel it apart...
...and then peel your carrots...now this was easier said than done...
...I found the best way to peel the carrots was to slip a sharp knife under the skin...slice it open...
...and then that made it easier to peel the skins off the carrots...
...then...I took the rings out of my Grandma's Veg-O-Matic...and maneuvered the limp carrots through it...
...to get nice even slices...
...mixed up the marinade...and put the carrots in...
...a couple of days later...I gave them a taste...and thought they needed a little bit of nori...just to make them a little more lox-like...
...then this morning...I gathered my other ingredients...a toasted plain vegan bagel...some fresh dill...some red onion...and capers...
...and assembled my bagel and vegan lox...
...it looked so adorably delicious...
...and it tasted just as delicious as it looked...we are definitely...definitely doing this again...
