...instead of W.I.A.Y. ...

...just dinner...

...we tried a historic recipe for Boston Baked Beans and Boston Brown Bread...both veganized...of course...
...we had all of the ingredients on hand...
...you have to start a day ahead...because the beans have to soak overnight...we went ahead and mixed up the spice mixture too...
...the next morning...you start cooking the beans with some soda...and your spice mixture...
...after a bit...you put it into the oven...for 8 hours...a long time...so we started early...
...a couple of hours before the beans were supposed to be ready...I got started on the bread...it's called a thirded bread...using three different flours...corn...rye and wheat...some oil...molasses and a flax egg...
...raisins just stirred in last...
...I lined my can with parchment...and I'm so glad I did...it made removal really easy later on...
...filled the can with the batter...
...and put it in a pot to steam...
...remove the cover from the beans still in the oven...
...so a nice crust can form...
...my bread blew its top...
...but I dumped it right out of the can...still wrapped in parchment...
...the crusty bottom bit...closest to the heat...you know that's going to be the BEST slice...
...unwrapped the parchment...
...and sliced into thick rounds...it smelled delicious...
...and it was...a perfectly dense, moist and sweet brown bread...
...the whole meal...we served it with baked sweet potatoes...oven fries...green beans and corn...and tommy-toes...

...and I wish I could say that this extremely time consuming meal blew my hair back...

...but it didn't...I actually prefer Bush's Vegetarian Baked Beans...the bread was good...I'd make it again...but I probably won't be making the Boston Baked Beans again...I'll eat them of course...they weren't terrible...just disappointing...

  1. Sorry you were disappointed in your meal. I just made potato and egg salad the other day. It was missing something. I think I needed a lot more of my sweetish dressing for it to properly marinate in overnight. Also I overboiled the eggs so they were somewhat rubbery, lol. I ate it anyway.

  2. Interesting meal!! I agree, though, that Bush's Veg beans are the best. Perfect flavor and texture straight out of the can. I haven't been cooking too much lately, just working on the boat! love, K

      I always think the end piece is the best anyway...my boys prefer the middle pieces so it works out fine...when I'm visiting Mom and Karen though there's a tussle as they prefer the 'heel' too...
