...Over the Weekend...

...it was another busy weekend...and another rainy one...
...the snow is just almost gone...
...of course...I did the regular weekly shopping...of note...a new vegan butter to try...AND...Romaine lettuce is back on the shelves...YAY!...
...I also bought fresh basil...and sorted just the right sized leaves...
...and planted the leftover in a cup in the windowsill...
...then I made Miyoko's vegan mozzarella...I've posted all about it before here...
...fresh little balls of vegan mozzarella after their ice-water bath...
...I toasted some artisan bread...and opened two cute little jars of bruschetta sauce...
...cut the little balls of mozzarella in half and chose the very best basil leaves...
...and assembled the pretty and Christmas-y Vegan Bruschetta to take to the annual Sunday School Christmas party...
...at the party...
...there were a lot of people...45 numbers drawn for the Crazy Santa gift exchange...it was a lot of fun...
...when we got home...I prepped a pound of pintos...and washed them well...
...and left them to soak overnight...
...Sunday morning...we had pumpkin pie muffins...and they were yummy...
...the Church was decorated for the Christmas Pageant later this week...
...Christmas is such a busy and exciting time...
...after Church we put the soaked beans in the instant pot with an onion, a garlic and some bay leaf...
...after a few minutes in the Instant Pot...
...I froze a couple of muffin tins of beans for later use...and put a couple of jars in the fridge for lunches and dinners this week...
...and finally Sunday afternoon...this arrived...did y'all know that the USPS makes Sunday deliveries...crazy...
...an early Christmas present...my old Lenovo is on it's last legs...so this was a welcome gift...I can't wait to get it all set up...

  1. Looks like you've had a very busy time. The appetizers you made for the Christmas party look very festive. I love the IP for cooking beans up fast. It's nice you have a new laptop. I'm sure you will be very happy with it.

      Yep...just about 20 minutes and they are perfectly done and not mushy...but you still have to soak them overnight first...at least I've not tried it without...but the cookbook that came with our IP gives instructions for soaked and unsoaked...

      ...we loved the little bruschettas they were yummy and we have some mozzarella balls leftover for pizza...I usually try to freeze the beans like that...then we can just grab 2 or 3 "muffins" for a bowl without thawing out the entire pot...
