...1.13...Over the weekend...

...this is just a long rambling post of some things that I took pictures of over the weekend...
...in an unusual twist for Saturday morning...the Man and I met for a latish brunch...of course I got my usual loaded hashbrowns and toast...it was yummy...we'd had coffee together at home before we left...
...after the weekly shopping was done...
...I got lots of greens...so I'll prep those a little bit later...
...also of note...we're trying another new vegan butter...this one is made with avocado oil...I'll let you know how we like it...
...I just added some water to a red velvet cake mix...and baked it in little ramekins...it was yummy and moist...
...this little angel came by for a visit...
...I cut up some celery that was getting past it's prime and froze it...
...I made some croutons...
...we can't get enough of these...
...I soaked and skinned some soybeans...
...steamed them...
...made soymilk and strained it...
...added some lemon juice to curdle the milk...
...and then ladled that into a cloth lined sieve
...and left it to solidify a bit...and make a lovely vegan ricotta...
...I made almond/oat muffins for a quick and easy Sunday morning breakfast...
...and I had bought these pepitas for a carrot cake recipe for when Our Airman was home over Christmas...but wound up not making it...
...so I just salted and roasted those...they were yummy too...
..these photos are kinda backwards and I had the oven on to bake some tofu...so I tossed in the pepitas too...
...I got these fresh blackeyed peas on clearance for 50¢...
...so we just cooked those...I've never had black eyed peas that weren't cooked from dried...have you?
...collards being prepped for the Instant Pot...
...and kale being prepped for the dehydrator...
...I chopped up all the stems and cooked them separately...I love them...but the Man does not...
...and we had another visit with the Airman's Baby...her mama too...

  1. Interesting, I've never even seen blackeyed peas fresh before! I have had them canned before. The little one looks so sweet! Love, K
