...12.7...Over the Weekend...

...I did not do any grocery shopping this week...so that made for a more relaxed Saturday...when I do shop again...it will be online for pick-up again as the lockdown tightens up again...they've recommended that anyone over 65 not even go to the grocery stores...I don't fall into that age bracket...but I figure if there's a safer option...I'll take it...
...but...we did get these two bags delivered to our back porch by a sweet parishioner...look at the size of those sweet potatoes...
...then we had another 'Thanksgiving' meal...so I did some prep for that...this is an experiment that actually turned out really well...I cooked a little bit of sour starch in some almond milk...not to make a pudding really...but just to thicken it up a bit and give it the sour taste of cream cheese ...because I'd be using an instant pudding packet...
...this is the sour starch that I used...and it's a totally new ingredient to me...I'd never even heard of it until Chef Jana mentioned it in her cheese making videos...so I ordered some...
...this is the pudding I'll be using...it's vegan...I'm trying to made a vegan version of a Jello pie that the Man's Mom always made at Thanksgiving...the 'kit' is not vegan...so I can't just add vegan milk to that...
...I made a graham cracker crust...just the red box grahams and Earth Balance...oh...and sugar...you know...a typical crust...
...processed into crumbs...
...just mashed into a springform pan...
...I let the milk/sour starch mixture cool...and added the pudding packet to it...
...then poured it into the crust...hoping that it would set up nicely...
...and guess what...it DID!...
...I made some potato pancakes...with leftover mashed potatoes...
...I put a can of cranberry sauce on my prett leaf plate...
...and made some vegan gravy with the leftover Vegeta from Mom's...it's really good...it smells just like Thanksgiving...
...my overfilled plate...
...dessert...the pie set up and sliced perfectly...
...topped with cherries...just like my sweet MIL used to make...I don't remember Mom ever making this dessert...
...Sunday afteroon...we got everything ready for the "Drive In" at the Church...I popped some popcorn...
...filled my Yeti with almond milk...we always had milk with popcorn when we were little...and the Man thinks it's so weird...his family always had coke...(or pop or soda...if you're not southern like me...haha)...
...then we had our snacks...
...the parking lot was filling up when we got there...and the turnout was really good...we didn't know what to expect as we'd never done this before...
...we got out snacks and the radio situated...they had a device that broadcast the sound of the movie over the radio...just locally at the Church...so that was neat...
...and got our knitting out...I'll show you on Wednesday...
...and the movie started...it was so much fun...I hope this becomes a yearly event...
