...9.9...What I Ate in a Day...as a Vegan...

...well...probably not the most interesting day of vegan eats...
...after my morning water and vitamins...I just made some toast and tea...with Silk and sugar...of course...but toast with Earth Balance is one of my favorite foods...
...not a very filling breakfast...so I had an apple a little bit later...
...it's been kind of thunder-y and rainy here...so not the best light...lunch was just a veggie burger (Boca)...and some leftover green beans...and a stewed potato...
...and one of our super nice parishoners had left these two beauties on our back porch...
...so...of course...I've been enjoying those...
...and then for dinner...I made Chick'un and Rice...I just got some Chick'un seitan out of the freezer and shredded it...
...and then I made a simple gravy using VegEx a little flour and some almond milk...
...and had that with some peas and carrots...it was really delicious...and I was thinking that the gravy would make a delicious vegan pot pie too...

  1. So, another one of those times that I've not been seeing the most recent posts for you....I've been checking and this is the first time in 5 days that I have seen a new post. (And I'm seeing 5 new ones all at once). I'll not comment on each one. Love the finished bike! So nifty, all the things you did.       ...yeah...not sure what's up with that...I've seen a few comments so I think the posts were there...for some people...haha...I've had to disable comments on a couple of posts...because I keep getting spammed with comments from Asia...if you know what I mean...haha...
      I do love the finished bike though...and funny about plarn...not sure how you'll work that into a conversation...but I'm amazed at how versatile it is...and how many different 'textures' you can get with it...

  2. I should always have seitan in my freezer to have meals like your dinner.
    I envy your watermelons! I bought only 2 during summer, and both of them were so bland... sad!

      ...I don't always have it in my freezer...but you're right it's a good idea...these two watermelons have been so delicious...so sweet...and I actually like that they have the big avoidable seeds in them...the seedless ones have annoyingly small seeds...haha...

  3. mmm the chik'n dish looks very delicious. I am trying to incorporate new recipes but I've hit a few yucky ones in the process...ugh.
