...I thought I'd try and use up some of the sugar-y mango that I'd gotten on the way back from Virginia at Buck-ees...as it's really TOOOOO sweet to eat out of the bag...so I soaked it overnight...
...which made it look rather unappealing...but I chopped it up...
...and added it to some oatmeal and almond milk...and it was an ok breakfast...the Man did not partake...but hopefully I can use up the rest of the mango...maybe I'll soak the sugar off of it and make a smoothie with the rest...
...y'all know I often get a Poppi while I'm shopping at Aldi...but they cost about $2...so I though I'd try a frugal homemade version to take with me while shopping...
...1/4 cup superfood fruit juice...1/2 tsp Braggs ACV...one can of sparkling water and one grind of pink salt...
...the verdict...it was good...probably won't replace Poppi for me though...haha...

...of note...the Baby Bare apples are about half the price of regular apples...$1.89 for a two pound bag...
...and Aldi had this pasta salad (accidentally vegan) on sale for 37¢...so I got two of them...and there's a recipe on the back for a spinach feta version that should be easy to veganize...
...the baby apples in Mamaw's basket...they're quite pretty even if they are small...
...we went to a street fair...and I got henna done on my hand...I'd never done that before...Our Airman used to get a henna tattoo every year at the beach...
...they had vegan popsicles...
...after the henna chunks fell off...it's quite pretty...but I probably won't ever do it again...have you ever had a henna tattoo...
...I hung the laundry out to dry in a sunny secluded spot in the yard...
...and I think the only food prep I did was to make some tofu sour cream...
...My Version of Tofu Sour Cream...there are 100s out there...
3/4 block of firm tofu
1/2 tsp. salt
1 Tbs. Apple Cider Vinegar
1 Tbs. Lemon Juice
1/2 tsp. lactic acid
1/4 tsp. nutritional yeast...and I just blend it in the Vitamix until completely smooth and creamy...

I just made some of that sour cream, it is terrific! I didn’t have lactic acid so I just use some extra vinegar. Love,K

ReplyDeleteWhere does one buy lactic acid? I've never had a henna tattoo or any kind of tattoo. I know the Indian women (here & elsewhere) get it done for special occasions like weddings.
