...well...we haven't 'eaten' it yet...but we baked a Pineapple Upside Down Cake and a batch of Brownie Bites to take up to Mom's...my sweet Sissie will be there and we're going to have a little family potluck tomorrow evening...
...I got my ingredients out...I didn't have any maraschino cherries...but I thought I'd just get the cherries out of a can of mixed fruit cocktail...guess how many there were...4...haha...
...I'm using the recipe that Mom used when we were growing up...from her old-old-old Better Homes and Gardens cookbook...you remember it...with the red and white checked cover...haha...
...mixed the cake...
...melted the vegan butter...
...drained the pineapple...I was surprised that the recipe actually calls for crushed or tidbits of pineapple...
...and spread those out in my round cornbread pan...Mom's square one holds all nine pieces...but this round one doesn't...
...I arranged my 'cherries'...and pecans...I also didn't have walnut halves...only pieces...so I used pecans instead...
...sprinkled the brown sugar over it all...
...and poured over the cake batter...
...then I just used the same bowl to mix up a batch of Brownie Bites...recipe here...the Post Punk Kitchen link doesn't work and it's not in the WebArchive...
...it makes 14 little brownies in my mini muffin pan...
...our 4-H instructor told us all those years ago that you need to fill any empty muffin cups with water before baking...and I was soo surprised when I got to Jr. High that she was our home ec teacher...
...apparently it was too much batter for my smaller-than-mom's cornbread pan...oh well...it's an "upside down" cake so it won't really matter...
...the brownies were done in 15 minutes...
...and packed up for the trip...
...also packed the Pineapple Upside Down cake in my Tupperware cake taker...it barely fits...
