...Tortilla Pizza...

...so...the very first thing we made with our Vegan Buffalo Mozzarella...was Pizza...of course...
...and we used some homemade tortillas for the crust...because...easy...and fun...and good...
...just spread some sauce on the tortilla...
...and slice your little balls of Vegan Buffalo Mozzarella...
...arrange them on your crust...er...umm...tortilla...
...sprinkle with some Italian seasoning...fresh basil would be really good too...but I didn't have any...
...bake until bubbly and melty...
...and slice and serve...

...OK...so...this 'cheese' is AWESOME!...I highly recommend it...I've got to try it out on some Omni's...

~Have a lovely day!...

...oh...I almost forgot the movie...Scout's turn...and I'm sure he would have chosen 'The Walking Dead' if he could...as he's currently binge-watching them on Netflix...but instead...a more family friendly film...The Finest Hours...it was good...a little too suspenseful for me...but good...it's sort of an historical film made into the action/adventure genre...so maybe a straight up documentary would have been better for me...

...A Better Vegan Buffalo Mozzarella...

...I've had Miyoko Shinner's Artisan Vegan Cheese since it first came out...

...you can read about ...my first Artisan Vegan Cheese here...

...and there's a recipe in the book for Vegan Buffalo Mozzarella...but then Miyoko posted a Better Buffalo Mozarella...

...so I printed it out to give it a try...
...so I blended up my yogurt and cashews...and poured them into a bowl...
...covered it and left it sitting on the counter...this is the scariest part for me...12 to 24 hours...YIKES!...
...then I mixed my agar and water...
...and got my ice bath ready...
...boiled the agar for a few minutes...
...then added the cashew/yogurt mixture...
...and started cooking...
...much like the stretchy-melty-gooey mozzarella from It Doesn't Taste Like Chicken...it looks gloopy and lumpy for a bit...
...and then it all comes together and is glossy and smooth and stretchy...just like the description in the recipe...
...then using an ice cream scoop...I scooped up some 'cheese'...
...and dropped it into the ice water...
...it hardens up pretty quickly...
...but Miyoko says to let it sit for 20 - 30 minutes...
...I drained mine on some paper towel...
...and then put it into a bowl covered with olive oil...as I'd read in the comments not to store it in water...

...I can't wait to try it out...and I'll let you know how it is...

...fakin' bacon again...

...since I've already sort of done a W.I.A.Y. post...I'll just share one thing we had yesterday...
...I made some rice paper bacon again...I just love this stuff...
...and taking a cue from L'éphémère quotidienneté des repas et autres trucs de magie ...specifically here...Fagots d'asperges ...

...we wrapped some around some asparagus...and it was delicious...

~Have a lovely day!

...W.I.P. Wednesday... a sweet little baby blue blanket...

...exactly like the sweet little pink baby afghan from last month...

...after the B.A.B.Y. blanket got given away at the baby shower...there were no 'boy' blankets in the N.O.A.H. closet...

...so we must remedy that...post haste...
...so...I got some complimentary 'boy' colours out of the closet...and I'll start the centers with that funky green colour...hopefully I'll have enough...
...and hinted at what I was making on Friday's 5 little things post...
...and just started making squares...again my goal is 4 a day...so I should be finished by next Wednesday...

...but I do have another secret (shhhh) project on the needle as well...so maybe I won't quite get it finished...

...what's on your needles this week?

Vegan One Hour Amish Rolls...

...this is one of those recipes that I've had 'saved' as a draft post for almost a year...

...so see...I really do need all of those...

...and these really are ready in about an hour...and they reminded me a little bit of Mom's Angel Biscuits...but not quite as fluffy...more like the Dinner Roll...as they are so named...
...gather your ingredients if you're a mis en place cook like me...and mix your yeast with the water...
...add your warmed soymilk/sugar/salt/Earth Balance mixture...and then I used 1/2 cup of whole wheat flour...just 'cause...
...then 2 1/2 cups of regular bread flour...
...mix that all up and you'll have a pretty sticky dough...
...put it in a warm place for about 15 minutes...at my house that's inside the oven with the light on...it seems to be the perfect temperature for raising bread...
...it will be pretty fluffy when it comes out...
...turn it out onto a floured surface...i.e., the countertop...
...pat to a one inch thickness...
...the recipe says to cut into circles...but I just sliced up the rectangle into squares...
...then the recipe says to fold them over bits of butter (Earth Balance)...but I just melted some Earth Balance and then poured it onto the baking sheet...
...and then placed each roll in the melted EB and then turned it over...
...and then put them in a warm place to rise again for about 15 minutes...

...I couldn't put them back in the oven with the light on as now the oven is preheating...so I just put them at the back of the stove near the oven vent...
...and they rose up quite nicely...
...then bake...the recipe says 10 minutes...but it was probably 15 before the tops were nice and golden...
...they turned out very pretty...and what could be better than fresh hot bread with dinner?...
...delicious with some roast chick'n seitan...

...we often have a big dinner on Sunday...and this was almost like a holiday dinner with fresh hot rolls...

...the only thing I'd do differently is to add maybe a fourth teaspoon more salt...just my taste though...

This is the original recipe for One Hour Dinner Rolls...my changes are in italics...

Ingredients

• 2 tsp yeast
• ¼ cup of lukewarm water
• 1¼ cup of milk...I used homemade soymilk...
• 3 tablespoons of sugar
• ½ teaspoon of salt
• 4 tablespoons of butter...I used Earth Balance
• 3 cups of flour - I used 1/2 cup whole wheat and 2 1/2 cups bread flour

Instructions

1. Dissolve yeast in water.
2. Milk, sugar, salt, and EB should be put into a pan over the oven and heated to lukewarm...I just microwaved mine until it was lukewarm...and then add to the yeast and water...
3. Add yeast and flour and stir until blended.
4. Put in a warm place for 15 minutes.
5. Turn out on a floured board and press to 1 inch thickness.
6. Cut out circles....I just cut the patted out rectangle into squares...
7. Fold dough over bits of Earth Balance...I just melted the Earth Balance and then placed the dough on it and then turned it over to 'butter' both sides...
8. Let rise 15 minutes and bake 10 minutes at a 350 degree oven.

...W.I.A.Y. ...

...this is actually what I ate Saturday...

...because...

...my sweet sissie came for a quick visit Saturday...
...so the Man mixed up this awesome Blackened Rub...he said he did some research online and mixed up about 5 different recipes...
...he said they all had basically the same ingredients...just in different proportions...

...and I rubbed some on my tofu before we grilled it...
...and I made my favorite green beans...Cook's Illustrated Green Beans...
...my plate...green beans...blackened tofu...new red potato...bread...
...Mmmmmmm!...blackened tofu...so good...
...all it needs it just a squeeze of lemon...so...good...

...General Tso's Tofu for Movie Night...

...we changed things up a bit and had General Tso's Tofu for Movie Night...
...delicious recipe from One Green Planet...

...and it was the Man's turn to pick the movie...and he chose...Elvis and Nixon...at first I thought it was a spoof...but then realized that it was all true...

~Have a lovely day!...
