Fluffy White Cupcakes

I used Jennifer's recipe from the Vegan Lunchbox http://shmooedfood.blogspot.com/2006/01/fluffy-white-cupcakes.html

The only change - since I can't seem to find any 'light' flour up here I added 2 Tablespoons of Cornstarch to each cup of flour. They turned out really well and everyone liked them...

The Man-Cub said they tasted just like 'birthday cake'...


Oh BTW - remember my rant about the fresh coconut and how much trouble it was - well it IS definitely worth it - this is the frozen kind on the cupcakes - next time I'll be hacking away at another whole coconut...
