...Vegan 'International Coffee' Mix...
...just three simple ingredients for a delicious instant coffee beverage...
...get your trusty kitchen hammer out and smash up some of the candies...I used three per cup...after experimenting a bit with different amounts...first one then two and finally three to get the flavor and sweetness just right...
...and a quarter cup of powdered soymilk for each cup...and a teaspoon of freeze dried coffee for each cup...I used decaf...as I'm quite hyper enough without caffeine...but of course you can use caffeinated coffee if you want...
...give it a whir in the food processor...
...don't worry if there are still little bits of candy showing...they'll dissolve in the hot water pretty quickly...but you can smash them better than I did if you want to...or maybe just process them longer...
...put a slightly heaping quarter cup in a mug...
...pour in some boiling water...
...stir it up good...
...and enjoy...
...this stuff is so good...I'm probably going to make a bunch more...and not just for camping...YUM!
...and you know what else I'm thinking would be good...another mix with cocoa and some crushed up peppermints...Karen gave me that idea...

ReplyDeletesooo i just bought butterscotch candies and instant coffee tonight because of your blog. i love camping-friendly vegan foods! (even though i hardly get to go camping these days haha) also love your ideas for the dehydrator. ever done tofu jerky? i need to tweak the marinade a bit so if you've tried it i'd love to compare notes! :)
