...it's fall...so that means bring on the gingerbread...
...I mean...gingerbread just smells like fall...
...and this was so good and quick and easy...
...I just used my trusty-tried-and-true vinegar cake recipe...with the addition of some gingerbread spices...and molasses for part of the sugar...
Depression Era Cake (a.k.a. Wacky Cake)
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup sugar
1/2 cup molasses - we used sorghum syrup
2 teaspoon ground ginger
2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 cup oil
1 cup cold water
1/2 teaspoon vanilla
Mix all of the above ingredients then add:
2 teaspoons vinegar - stir in quickly
Makes 1 - 9" pan (round or square) - Bake at 350 until cake tests done.

Love gingerbread. When I lived in the East Midlands on 'bonfire night', old Guy Fawkes and the gunpowder plot, we had parkin which is a form of gingerbread. It had to be made a week in advance and kept to mature! Dark, sticky and divine!
