...W.I.A.Y. ....

...in this week's episode of What I Ate Yesterday...we're still trying to use up all the things in the freezer before we head into freezing another season's produce...
...this that in mind...I had a bag of blueberries that needed to be used up...
...so...

Breakfast - Vegan Blueberry Muffin, Tea...recipe here...
...I love arugula...and since I'm the only one in my little family who does...I get to eat the whole pack...

...the Man might eat a little bit on a salad...but it would be a very little bit...
...so I cram as much as I possibly can between two slices of toasted bread slathered with Vegenaise...and layer on a couple of slices of baked tofu...

...it makes such a delicious lunch...

Lunch - Tofu and Arugula Sandwich on Toast
...a perfectly simple vegan pizza...
Dinner - Vegan Pizza with fresh spinach

  1. i love the peppery goodness of arugula also!! and Duane definitely does not! Lindy gave me some just a couple of days ago fresh out of her garden.
