...I wanted to completely cover the top of Mom's Lasagna with Vegan Mozzarella Cheese...
...and I've made this stretchy Vegan Mozzarella before...the original recipe is over at It Doesn't Taste Like Chicken...
...but instead of shredding it...I spread it out on a layer of plastic wrap...
...and put it in the freezer until it stiffened up...then I had a 9 x 13 inch slice of vegan mozzarella...perfect to top Mom's Lasagna...
...I think I may do this again...and cut it into sandwich sized slices...
