...W.I.A.Y. ...

Breakfast - Scrambled Tofu and Toast

...I just never get tired of this breakfast...and a sprinkle of kala namak (black salt) and pepper makes it oh so good...
Lunch - spinach salad with granny smith apple, walnut and vegan feta - orange

...another case of me using up something that the boys are not particularly fond of...fresh spinach...
...Bok Choy soup...
...seriously just broth and Bok Choy...so good...and so simple...
...and now that 'summer' is here and people are giving me squash...
...I made a delicious Zucchini Pilaf...
...and some crispy baked tofu...

Dinner - Bok Choy Soup, Baked Tofu, Zucchini/Mushroom Rice Pilaf

...Inspire me with something yummy you ate!

...and have a lovely day!

  1. I'll have to try that spinach salad. I love Granny Smith apples and feta cheese :-)

  2. I marinade thinly sliced pressed tofu in tamari, lemon juice, pinch chilli and garlic with salt. Let it soak for about an hour then fry until crisp, turn and fry the other side until crisp. Delicious hot and cold. Cauliflower rice, just discovered that.
