...Vegan Bruschetta Caprese...

...still using up our Vegan Buffalo Mozzarella...
...we toasted some rounds of French bread...and brushed on some extra virgin olive oil...
...sliced some fresh tomatoes...so they wouldn't be quite so 'juicy'...
...then just started assembling...tomato on bread...
...Vegan buffalo mozzarella on tomato...
...a little salt and freshly ground pepper...
...and top each with a fresh basil leaf...
...and I did serve these to some omnis...and they were pronounced very good...

...I really recommend this vegan cheese...I know some vegan cheeses are...shall we say...less than delicious...but this one is really good...
