...Vegan Saag Paneer...

...like I said on Tuesday with Julia...we make cooked spinach more in the fall than any other time...
...still using up the Vegan Buffalo Mozzarella...

...we made a delicious Vegan Saag Paneer...subbing the Mozzarella for the Paneer...

Substitutions:

...Cashew Cream mixed with 1 teaspoon vinegar for the 1 cup buttermilk...
...melted Earth Balance for the 2 tablespoons clarified butter...
...2 balls of Vegan Buffalo Mozzarella for the paneer cheese, cut into cubes...
