...What I ate in a Day...as a Vegan...

...I kinda feel like I ate all day long...
...I started with a chocolate muffin and a banana and a coffee...after the water and vitamins that is...
...and then I wanted curry for lunch...so I whizzed up some cauliflower rice...and added some peas and onions...and curry powder...
...it was simple to make and just what I was wanting...
...and I had some tofu with it...of course....and some tea...
...then for dinner I had a 'salad'...really some romaine leaves and an orange...I'm out of both my croutons....I need to make some more...and my ranch dressing...also need to make some more...but I love lettuce and fruit...and these have been some of the sweetest oranges I've ever had...not sure why...because they shouldn't even be in season...and I had a plate with beans, broccoli, sweet potato and sauerkraut...

...so that was it for the three squares...
...so now for the snacks...in the morning...I had one of those super sweet oranges...which was delicious...and a not so delicious peach...peaches are so hit-or-miss...don't you think...?
...then the reason that I didn't have any vegan ranch for dinner is because I used it all up as a snack in the afternoon...
...I just ate the lettuce leaves like chips and dip...so good...
...and then I made my favorite mushrooms and spinach...initially as a side for dinner...but the Man doesn't really like it...and I'd eaten about half of it before dinner was ready...so I just put the rest in the fridge for later...it was a good snack though...
...and finally...I was feeling 'snacky' (a word my nephews taught me when they were little)...before bed...so I had a handful of oats and chocolate chips...sort of a deconstructed cookie...

  1. when I am feeling snacky I like a little handful of raw oats and maybe a teaspoonful of peanut butter, it is quite delicious :)

      ...that sounds yummy too...maybe I'll add that to the chocolate chips too...
