...What I Ate Yesterday...as a Vegan...

...breakfast was a blueberry waffle...vegan sausage and coffee...
...the Man and I met for lunch at a small cafe...and they didn't really have any vegan offerings...but they cheerfully subbed all the omelete fixin's in a wrap and a side of toast and a cup of fruit...it was pretty delicious...
...we had some vitamix hummus as an afternoon snack with some boughten pita chips...
...and then dinner was a series of small plates...but none of them were all that small...haha...a salad consisting of just lettuce and an orange...I just love that combo...
...and another medium plate of veg...carrots, tomatoes, and cucumber...
...the beans and the quinoa were both from the freezer...so just a frozen muffin cup of each...
...and then we fashioned these delicious roasted cauliflower tortillas...

...and I was really too stuffed to eat anything else...

...what did you eat yesterday?

  1. The vegan sausage you had for breakfast is totally tempting!
    So sad to see restaurants that do not offer vegan optionS... we are in 2019!!!
    Lettuce and orange... I have never try it but it seems a good match. I will try!
    And the tortilla must have been delicious!

      ...yeah...it's too bad...but I can almost always find something vegan to eat...your cashew cream cheese looks delicious too...

  3. It looks like you ate very well yesterday :-) I had shreddies and blueberries and coffee to drink for late breakfast. Then for dinner I made mashed potatoes, fried pork chop with caramelized onions and stir fried savoy cabbage, red peppers and mushrooms. In between I drank a lot of water and sometimes water with a bit of lemon flavour and tea (green tea with citrus fruits).

      ...I love blueberries with cereal too...and almost always have one cup of coffee with breakfast...the caramelized onions and cabbage sound yummy too...
