...we're back home...
...and we started the day with some vegan waffles...
...then for lunch...I sliced up some of the delicious pears we'd gotten over the weekend...
...and added some walnuts to make a nice salad...
..."Griddler-ed" some sweet potato...
...and the Man made a smallish pot of chili...and that's what we had for lunch...even though I neglected to take a photo of the finished lunch...haha...
..then for dinner...I thought I'd better use up the fresh veg I'd gotten at Stuff-Mart before it got all wilty...
...so...I washed those sandy radish tops really really well...
...these radishes are pretty peppery...so I'll use them sparingly on salads...
...then I cut the green tops off the beets as well...
...and added all of the greens to a pan...
...and just sautéed them down...they'll really only make two small servings for us...but they'll make an interesting change from spinach and collards...
...then I just cooked the beets whole in their skins...
...and when they were done...the skins just slipped right off...
...sliced them and put them back in the pot...
...with some pepper...
...salt...
...and a big dollop of Earth Balance...
...and this is all of the cooked beet/radish greens we ended up with...
...so for dinner we had Chick'n patties, vegan biscuits, the buttered beets, peas, sauerkraut, applesauce and greens...
...and snacks for the day...were a handful of BBQ potato chips...
...and one of the Jonathan apples...
...and I used the wedger attachment in Grandma's Veg-O-Matic...
...it's oddly off-center...and I wonder why...???

ReplyDeleteIt looks like you had a lot of good food yesterday. I ate out yesterday because I was out and about. I had a Vietnamese meal consisting of a large bowl of Pho Noodle Soup and a roll dip. Yum!
