...Saturday morning started with some vegan pancakes...
...I LOVE pancakes...
...followed by the weekly shopping trip...I went to Stuff-Mart this time...mainly because my Garmin Fit needed a new battery...and then I stopped at Aldi...and Food Lion as no one else carries my favorite Silk Protein...
...then I started getting everything ready for the trip to the mountains...the Man's Mom's birthday is this week...so I thought I'd make her a birthday cake...
...I just made a yellow cake (
recipe here)...and then this cooked icing that she used to make all the time when the Man and I were dating...
...I think it turned out OK...just poured it over the cake...
...so Sunday after Church we headed up the interstate...aren't the mountains pretty...
...one of the first things we did after arriving at Mom's...was to go down to the 'bottoms' where my sweet Baby Brother and SIL keep this amazing garden and greenhouse...
...he had invited us down to cut all the fresh spring greens we wanted...how awesome is that...
...when we got back to the kitchen...it was time to start some prep for dinner...so naturally we started with dessert...and baked some spice cupcakes...
...and then iced them...
...using Mom's half-century old icing-squirter-decorater thingy...so fun and so nostalgic too...
...Mom sprinkled them with chopped pecans too...and I thought I had a photo of that...but apparently not...
...washed the beautiful salad greens from the garden...
...and then Mom added some radish (also from the garden) and carrots and cucumbers...
...not sure why these photos are sideways...sorry...this is my huge platter of the Man's famous spaghetti sauce...it was so delicious...and my brother and SIL came for dinner too...and we had so much fun sitting around for hours talking and visiting...
...and then we went over to the Man's homeplace to celebrate his Mom's birthday...and I got the cake out of the cooler...it fared fine...
...lit some candles and sang Happy Birthday...it was a lot of fun and I think she enjoyed it...we had our cake with coffee...
...and then we took her out to dinner...and I got a delicious strawberry and pecan salad with raspberry vinaigrette...photos still sideways for some reason...
...and a baked potato and broccoli...it was a delicious and we had a fun a visit...
