...kind of a plain old regular day of vegan eats...I started the day with a bowl of leftover rice...which I had with copius amounts of Earth Balance...I do love rice so much...
...I was on my own for lunch as the Man had an appointment...so I made myself a big bowl of vegan ramen...a few crudités...and some baked tofu with bbq sauce...very satisfying...
...for dinner we had a sort of deconstructed vegan pot pie...there's a vegan biscuit under all that veg and gravy...
...and a couple of snacks...this one I almost forgot to photograph until I had eaten all but the last piece of 'ants on a log'...
...and I'm still rationing out the dried apples that Mom brought me...some plain and some with cinnamon sugar...so good...

Yum - your food looks good and healthy like always! I had a bowl of oatmeal with peanut butter/dates/sugar/chopped apple for bfast, a cheese & veggie sandwich for lunch made with my homemade bread of course, and a big plate of a taco casserole that I made to use up a bag of very stale tortilla chips. I wouldn't normally do that, I'd just toss them....but here in the Bahamas a bag of chips costs $8-10!!! It turned out really good so I'll do that again even with fresh ones!! Love, K

Yesterday... after the burrito i had a vegetable soup for lunch and a braisé for supper.
That looks like an amazing day of eats!! "Buttered" rice is still one of my all time favorite comforts. I shall put pot pie (deconstructed or otherwise) on the menu for this weekend.
