...I made steel cut oats for breakfast...the Man loves steel cut oats...but I'm just kinda getting used to them...
...and I actually still prefer the old fashioned rolled oats...
...topped with some chia seeds...nuts...flax seeds...raisins...
...and a chopped apple...it was really yummy and filling...
Breakfast - Steel Cut Oats, apple, chia, nuts, flaxseed...
...later I had a few of these little figs for a snack...
Snack - Baby Figs...
...for lunch I made these little lettuce wrap/boat thingies...
...they were messy...I just folded them over...
...kind of like a bunless veggie burger...
Lunch - Lettuce with TVP burger, ketchup and mustard...
Snack -I had an orange and some pecans for a snack...but failed to take a picture...sorry...
...I whipped up a vegan pasta salad for dinner...just peas, carrots and fusilli pasta...
...mixed with some Vegenaise and vegan parmesan...
...I love this classic pasta salad...but for some reason I kinda rarely make it...
...and served with some grilled tofu and California Veg mix...

...W.I.P. Wednesday...
...I finally have the F.O. of the Green Lapghan...
...all of the ends woven in on the back...but wait...I see one I missed in the middle bottom there...so I'll fix that before I take it to the Church...
...I'm really quite pleased with the way it turned out...all those bits of green yarn just tangled there in the N.O.A.H. closet...and now...a usuable blanket...

...Over the Weekend...
...I made some snacks...
...first I made quick work of cutting some corn tortillas into 6ths with my pizza cutter...and brushed them just with some water...
...sprinkled on some Trader Joe's Chili Lime...
...and baked those in the oven...
...I love these simple crisp low fat chips...
...then of course we needed something to dip them into...so I whipped up some hummus...
...and added some leftover roasted red pepper...it was yummy...
...and then for another simple dip...I got out some onion...diced tomato - the kind with the green chilis in it...and cilantro...
...chopped the onion...
...added a generous handful of dried cilantro...do you love it or hate it?...
...and we had some blue corn chips with that...

...Dinner and a Movie...
...just a bunch of summery veg...
...we're trying to get our fill of it while it lasts...fall will be here soon...
...and Scout's pick for the movie...Rogue One...he's seen it now 4 times...but it was our first viewing...and it was good...it's an in-between Star Wars...kind of episode 3.5...since they've renumbered the original Star Wars as #4...A New Hope...and it was kinda weird/neat to see the CGI'd Leia at the very end...

...Friday Favorites...
...after all that time away from home...it was so nice to settle back into routine here...
...we took Jack to his Grandma's house while we were on vacation...and we left Kitten (Our Girl came by every day and took care of her)...so you should have seen Kitten pounce on Jack the second he came in the door...
...she absolutely loves him...and I must say that I'm surprised at how well Jack has adapted...

...What I Ate in a Day...Traveling...
...I had made these 'granola' packets before we left...
...in each packet
1/2 a Brazil Nut (100% of daily selenium)
1/4 cup oats
1 T Chia seeds
1 T Flax seeds
2 T Hemp seeds
1 T Cacoa nibs
2 T chopped dates
...I almost always take a cooler with me when I travel by car...so for breakfast most days I just had coffee and one of these packets with some vegan milk from my cooler... ...and I was so excited about trying this vegan restaurant... ...we had to wait a bit...but that was fine...everyone was cheerful and upbeat... ...I tried the vegan reuben...with a side of chickpea salad...all of their sauces are vegan...and the salad was like a potato salad only with chickpeas... ...I got the grilled tofu in mine...and it was delicious... ...and Scout got the veggie burger as a patty melt...with a side of hummus and chips... ...he said it was really good... ...and then of course we had to try the vegan desserts...the server recommended the vanilla cupcake... ...it was good...moist and creamy...we both thought it had too much frosting though... ...and then we got the peach pie... ....a cute little single serving... ...and also very very good... ...this gorgeous dish was really the only 'fail' of the entire trip...we got it at a swanky little wine bar...and it's supposed to be a sort of deconstructed sushi bowl with marinated tofu...but I swear they just took a block of tofu and crumbled it into the bowl as it had absolutely no flavor at all... ...and then in Knoxville we waited a long time for a table at 'Not Watsons'...for just some regular pub food...my black bean veggie wrap was quite good...
...we ate a lot of good vegan food on our trip...it was easy...

...so we did manage to finish both of our blankets for Women's and Children's Hospital...
...and since I had to take them over to the Church for the N.O.A.H. meeting...I thought I'd just photograph them on the crib in the nursery... ...this is mine...just a stockinette stitch rectangle with a knit border... ...and Scout's blanket... ...just a garter stitch rectangle...I'm so proud of him finishing on time...it turned out great!

...Eclipse 2017...
...we were only supposed to have 96% obscuration here...but we were still pretty excited about the eclipse...
...but just as it started there was exactly one big cloud over all of North Carolina...and it was right over our house...
...but we donned our special glasses...and looked up...as the clouds skirted the sun...
...it was a fun family event...
...and Scout managed to get a photo through his glasses...the trick was to hold the glasses about a half an inch away from the camera...
