...welcome to another full day of vegan eats chez Affectioknit...
...we started the day with a smoothie...
...which we should probably do every day...but it doesn't always seem that way in the wintertime...when it's so cold outside...
...so a little bit later in the morning...we had some nice vegan biscuits and gravy...yummy...warm...and comforting...
...I made a cucumber and tomato salad with store bought tomatoes and cucumbers...
...so...lunch was leftover pinto bean soup...spinach and sweet potato...and tomato and cucumber salad...
...and that was quite filling...and I didn't have any afternoon snack at all...
...and dinner was the Man's idea...he's been eating a lot more tofu than he used to...he never was really a fan...but now likes it in Mexican or Asian inspired dishes...
...and this recipe was straight off the tofu box...
...so we made huge burritos with that...and served it with all the fixin's...
...and again no real snack before bed...but I did mix a little bit of cocoa...a spoonful or so...into a cup of hot peppermint tea...it was delicious...

...Tuesdays wtih Julia...
...we made the Vegan Orange Butter-cream Icing to ice the orange cake...
...it's just a fluffy...buttery...orange-y icing...
...it is pretty and creamy...
...and delicious...

...Over the Weekend...
...a bunch of randomness...most of it involving food...
...I made very good use of the oven...I baked a crispy loaf of French bread...
...roasted some veg...
...made some of our favorite Brownie Bites...
..baked some tofu...
...some scrambled...some thick slabs...and some thin slices...that I rubbed with liquid smoke...to use as vegan bacon...
...then when it was done...
...I sliced a buttercup squash in two...I loved these so much when we lived in North Dakota and they were cheap and abundant...they are neither here...but I always buy one when the appear in the local stores...
...baked it along with it's seeds...
...I've never had one bake like this...where the skin just kind of peeled itself off as it baked...but I liked the effect...
...the seeds were yummy...
...and the skin popped right off...
...on the non-food front...I repotted all my little apple trees...
...they were getting a little bit spindly...tucked into Douglas-the-avocado's pot...so I moved them all to a larger pot...
...and I'm just moving it around all day chasing the sunlight...
...in the afternoon it was above 50 degrees so I put them outside for a bit...
...I cooked up the last of the turnips we got a couple of weeks ago...
...so sweet and delicious...
...I made a big pot of Lasagna soup...using up some of the Ditalini noodles we still have instead of broken lasagna noodles...and I used cauliflower cream for the cream...so it's pretty much fat free...it was delicious...and I'm looking forward to the leftovers...
...I had some rather wilty celery that I didn't want to go to waste...so I cut it up...
...and bagged it up for the freezer...
...everything else was much the same...how was your weekend?...

...Dinner and a Movie...
...Dinner was the Man's spaghetti sauce from the freezer...so easy...just added a salad and some bread...
...and the movie was The Fisher King...
...it's an old movie from the 90s...starring Robin Williams and Jeff Bridges...and was a really sweet story of redemption...told kind of like a fairy tale...it was really good...and we were both surprised to see that it was directed by Terry Gilliam...(that's right...Monty Python)...
...what have you been watching lately?...

...Friday Favorites...
...I got out my mandoline...and sliced a potato really thinly...
...and just arranged the slices on parchment...
...sprinkled with pink Himalayan salt...
...and microwaved...just until the chips started to turn golden...
...so I took those off the parchment...and popped the others back in the micro for just a few more seconds...
...until I had a whole plate of crispy fat free chips...
...so quick and good and fun to eat...

...typical breakfast everything bagel...
...I had seen a video (that I can't find now...sorry...and I searched my youtube history...if I can find it I'll come back and post a link)…
...the first thing you have to do is bake some baking soda...and then don't touch it...because it will burn your skin...not hot...like lye burn...so be careful... ...mix that with some water...and proced like you normally would to make noodles...make a well in the flour...and slowly add the liquid... ...and knead... ...just until everything is incorporated...it will be a fairly stiff dough at this point... ...wrap it in plastic and let it rest for 20 minutes or so...and it will relax and be a softer dough... ...so you can roll it out really thin... ...and even thinner than that... ...as thin as you can... ...then roll it up into a log... ...and start slicing noodles...again...as thin as you can... ...this is what they look like coiled up...you can see the layers... …...just slice a bunch of coils...and unfurl them... ...I thought I'd let some dry over a rack for some curly noodles...but when they cooked...it made no difference...haha... ...so I just took a bunch of noodles... ...and coiled them up into little nests... ...you can freeze them at this stage ifyou want to... ...but we went ahead and cooked ours fresh... ...added peas, cabbage, and green onions... ...and stirred in a spoonful of miso...off heat... ...and a slab of baked tofu... ...ate and slurped that up with chopsticks...it was so delicious... ...for dinner...the Man sautéed some tofu in herbs and olive oil...and we had that with vegan cornbread stuffing, gravy, broccoli, rolls and cranberry sauce... ...and for dessert I made another Adonis Cake...
