...I started out with a big chopped salad...
...and vegan ranch dressing...
...lots of tomatoes and cucumbers...
...and then I made a sort of Italian tofu sandwich...I do love sandwiches...
...and then because the Man was having pizza for dinner (he's not as big a sandwich fan as I am)...I made an olive flatbread using some of his pizza dough...
...and then for the movie...of course we finished our series Unforgotten...oh my goodness...that was a surprise...not the whodunnit part...the Man had that figured out as we usually discuss all of the options and come to some conclusions before the ending...so...it's good to know there will be a season 5 in 2022...

...7.30...Friday Favorites...Birthdays...
...I mean...what's not to love about birthdays...I love opening cards and presents...
...the kiddos sent beautiful flowers from Japan...
...this is from my sweet sissie...the seagrass trivet she made herself in the Bahamas...my favorite kind of pressie...and the other 'thing' is a drip guard for my George Foreman grill...because I got it secondhand for $5 it didn't come with one...and a lot of the veggies I cook in it 'sweat'...and I've just dealt with it with a plate...but this is a much nicer solution...and so thoughtful of her as I only mentioned it in passing...mmmwah!
...the Man's gorgeosus Pop-Up card...I love pop-ups...
...kind of a 'joke' gift...remember I was looking for a kitchy ceramic egg holder to serve my vegan egg dipping sauce...well...the Man got this for me...it'll probably work even better because it will pour out the beak...haha...
...and and another little giftie...a bell for my bike...I had one in North Dakota...no idea what happened to it...and this one is red...perfect...
...I think all my other presents were bike-related...I also called Mom and thanked her for the Bike Fenders that she 'got' me for my birthday...as she sent me a gift card and that's what I spent it on...but they won't arrive until August 2nd...they're from Germany...
...this is a new larger basket for my bike...my old one was actually a white woven basket...with flowers...the kind you used to see on girl's bikes back in the 70s...but it was too small for ferrying books and such back and forth to the Church...which is what I usually use my basket for...
...kitten loves it...of course...
...new tires and tubes...mine are really old...like from North Dakota...so at least 10 years old...
...and a new padded seat cover...that was thoughtful...
...and the Man baked a vegan chocolate cake...he's not the baker of the family...haha...but he did a great job...just using a cake mix and some Egg Replacer...
...it baked beautifully...
...and iced with chocolate...
...a random number of candles...
...because the real amount would have created quite the blaze...
...and it was delicious...
...and the Man made dinner...Cajun Black Beans and rice...he said it was hard not to put in any cumin...the recipe did not call for any...haha...
...also delicious...it was a pretty perfect day...

...7.29...What I Ate in a Day...as a Vegan...
...breakfast (that I barely remembered to take a photo of...sleepy-headed...I guess)...was my favorite banana and flaxseed and peanut butter on toast...almost completely devoured...and tea...of course...
...I had a Cutie for a snack...I'd gotten a bag of repackaged ones at the grocery store last week...maybe from a busted bag or something...anyway...89¢ is way better than $4.99...
...and I had a delicious fresh peach...
...for lunch I had the leftover Lobster and rice...some cooked squash and onions...greens, green beans and tofu...and it was too much food...
...I had made a trail mix of sorts to use up some sunflowers and cranberries in the pantry...
...that's all...I just mixed them together in a jar...
...and it makes a yummy snack...
...and then for dinner...I had a big plate of green beans some rice and tofu...doused with soy sauce...

...7.28...W.I.P. Wednesday...
...I finished the first sleeve of the Yoga Sweater...
...and I shaped the top more than the pattern does...just to make it more rounded and fit into the armscye better... ...and I've finished the increases of the second sleeve...once you start the decreases it goes pretty quickly...

...7.26...Over the Weekend...
...as we were lying in bed reading the Man said he wanted pancakes for breakfast...I mean...who doesn't want pancakes for Saturday morning breakfast right...haha...
...I had mine with the first fresh peaches of the season...and the Man had his with Log Cabin syrup...haha...again...
...I did the grocery shopping...I went to both grocery stores...but not to Aldi...
..nothing unusual there....
...but I did get these new-to-me little cups (labeled Vegan) for when I want a quick lunch/snack...and when I was checking out the cashier said she loved these...so it was nice to have a recommendation on the new product...
...and then I wanted to use up the last of the zucchini that we'd been gifted...so I grated some...
...to make a vegan version of our favorite zucchini bread...
...it's from this old old cookbook and I've been making it since we were first married...it's delicious...
...it's super easy to veganize...I just use Applesauce for the eggs...and I don't put any shortening in at all...and I only make half...
...you only grease the bottom of the loaf pan...
...bake until done...I won this little cake tester as a door prize at a Pampered Chef party in North Dakota...so a long time ago...and I still use it all the time...
...let it cool a bit on a wire rack...
...and then when you won't get burned...
...eat the warm 'heel'...seriously the best part...and it makes a perfect rushed Sunday morning before Church breakfast...
...when we got home from Church on Sunday...all this delicious veg was on the back porch...YAY!
...so...I'll be making zucchini bread again soon...
...in the afternoon...I prepped the collards...
...and got them into the Instant Pot...
...and set it on the back porch...you know...cooking greens is kind-of stinky...haha...
...and I ate all of the stems for dinner...
...and after dinner...while sitting around watching TV...I broke all of the green beans into a pot...
...and put those on to cook before bed...
