...this is vegan eggplant parmesan...using some of the violife parm and mozzarella...and I know it's a pretty sad picture...and for some reason...I didn't take a photo of the completed meal on my tray like I usually do...but I had the vegan eggplant over the noodles and a salad with vegan feta and balsamic dressing...and a roll...and tea...of course...so you'll have to imagine that...sorry...
...and the Man and I were on our own for the movie...for the first time in a while...we watched an old (1981) version of Agatha Christie's Seven Dials Mystery...and at first I didn't really remember it but as the story went on I kind of did and I remembered the 'whodunit' part...but I didn't share that with the Man...because I didn't want to ruin the story for him...he likes NOT knowing the ending...

...1.29...Friday Favorites...
...before he left...Our Airman got the big 55 gallon tank all set up with easy to care for Shubunkin goldfish for us...they are beautiful calico goldfish that shouldn't take a lot of trouble...he wanted to make sure we kept his tank filled for the duration of his overseas service...so that it would still be in good shape when he returns...and then he'll take back over...

...1.28...It's SO Quiet here now...
...because...there'll be no more baby dancing for a while...
...we headed here...
...and had one last glimpse of this sweet little family...and they are now well on their way to Japan...they won't arrive there until tomorrow...and that date/time line thing is mind boggling...I really have to think hard about it...haha...
...so......happy for them...but......sad for us...

...progress continues on the knitted Shearling jacket cover...not sure what to call this project...haha...the four bottom panels are done...
...and a band that will hit about the middle of the waist...
...I ordered another skein of the Homespun from Amazon...as I'm sure I wouldn't have had enough...and started crocheting the border of each panel...
...just single crochet all around...

...1.25...Over the Weekend...
...it seemed like a pretty eventful weekend...
...Friday evening...this happened...
...eeeuuuwww...there's some sort of blockage...but they determined that it's downstream from the tank...still...eeeuuuuwww...
...anywhoo...all sorted now...and we're back to normal flushing... ...I did the weekly InstaCart shop...still staying completely out of stores...we don't want the kiddos to contract anything before they have to fly overseas... ...this sweet package arrived from Mom... ...when she was here visiting last week...we were talking about running the humidifiers...and she mentioned that she puts these scented drops in hers...so she sent me some...how sweet was that...
...Jack doesn't look too sure about it though...I think I can tell that he's lost some weight though... ...then Sunday morning...this happened... ...the boiler went down and they couldn't get it started back...so we had no heat in the sanctuary...so sad to see an empty church on Sunday morning... ...and sadly...our time with Our Airman and his family is winding down...this was his last weekend with us before they leave for Japan...so this will be one of the last times that I get to gaze on this little Lovie... ...and so...we're trying to make sure that Our Airman gets all of his favorite foods before he leaves...
...I made a big batch of potato pancakes...with the leftover Grandma's Mashed... ...and I made some chick'n seitan... ...and shredded it... ...and made some vegan celery soup... ...and I added some Violife cream cheese...because I didn't have any vegan sour cream...it worked fine...and the only other ingredient to this favorite casserole was some TVP crumbles...(subbing for the dried beef in the original)... ...and got some creamed corn from the freezer...and we all sat down to a hearty and comforting meal... ...this morning we were up before dawn...to move everything out onto the carport...again...because the movers really are coming this morning...

...and the movie was his choice...Mr. Deeds...it's a movie that I don't even remember ever hearing about...and...It is a remake of the 1936 Frank Capra film Mr. Deeds Goes to Town, which in turn is based on the 1935 short story Opera Hat by Clarence Budington Kelland...which is kind of interesting...it was fine...a funny romantic comedy from 2002, starring Adam Sandler and Winona Ryder...

...1.21...What I Ate in a Day...as a Vegan...
...breakfast was an apple, some orange juice, and walnuts...and tea ...of course...the freezer jam is there for the Man and the kiddos...I didn't have any...
...lunch was some leftover potato soup, leftover green beans...and a corn muffin from the freezer...and tea...of course...
...afternoon snack was some leftover Mexican...our fridge was getting pretty packed and we were making a conscious effort to use some things up...
...Mom's salsa is delicious...with refried beans and Mexican rice...and a few chips...
...one of Our Airman's favorite meals is sort of the traditional U.S. Thanksgiving dinner...I just used some Gardein chick'n strips for the 'turkey'...vegan stuffing...peas, carrots...(Grandma's mashed...not pictured)...and cranberry sauce...(roll also not pictured)...I should have waited to take the photo until I finished dishing up...haha...
...dessert was a Guinness cake...recipe is in this post...scroll down...we also had vegan cream cheese icing...but I did not partake...

...1.20...W.I.P. Wednesday...
...so...I've had this jacket for many years now...I even found an old photo of it from 2010...
...and I have these skeins of brown chenille yarn...that I bought about 20 years ago to make a crocheted Teddy Bear (called Bearie or Beary...not sure about the spelling...but pronounced pretty much like the name Barry) for Our Airman...it was a lot from Ebay...so I had to buy a bunch even though I only needed 1 skein...and it's been in my stash ever since...and since I'm pretty much only knitting from stash right now...I thought I'd come up with a project to use up a bunch of dark brown chenille yarn...not sure about the cream coloured yarn but it's been there a long time too...I'm pretty sure it's called Homespun...but I no longer have the wrapper...
...so...my plan is to use this jacket as a sort of liner for a pieced cruelty free shearling type jacket...
...I plan to knit each one of those squares or pieces individually and then crochet a fuzzy cream coloured border around each one and then stitch them to the existing jacket... ...this is just a random image from the internet of a shearling jacket...so you can get an idea of where I'm going with it... ...and I plan to extend the new jacket beyond the end of the old one by a few inches... ...a close-up of the smooth side of the knit...it looks pretty suede-like... ...and the back - purl side... ...so I just took a bunch of measurements... ...the old jacket actually has a bunch of 'lines' that I can use as guides... ...just a couple of panels so far...
