...I don't know what I was thinking by putting that much food on my tray...
...store-bought cucumber and tomato...so sad to see the end of the summer veggies...store bought corn on the cob...also sad...I cut mine off the cob because I could tell that it wasn't very tender...the Man ate his off the cob (well...what he ate of it)...green beans, squash and sweet potato...tofu with BBQ sauce...and a few little baby pickled beets...
...I may have gotten through half of it...
....I'll put it down to the stress of having to watch more of Jack Ryan...I'm so glad to see the end of this series...and I'm hoping there are no sequels that my besties want to watch...

...Vegan Hand Pies...
...when we were little we loved these little individual pies Mom used to make...hers were usually apple from our old tree that is no more...
...so I just made my trusty easy pie crust:
Super Easy Pastry Crust:
1 3/4 c. flour - I used White Lily All Purpose
1/2 c. oil
3-4 tbsp. cold water
Mix oil and water together and add to flour, mix well and roll out between a handy-dandy Pie Crust Helper.... ...remember a couple of weeks ago I found that accidentally vegan cherry pie filling... ...put the filling on one half and fold over...and press/seal closed with a fork... ...poke a few holes in the top... ...and place on parchment paper... ...and bake until golden... ...I wrapped the pies in waxed paper for easy eating out of hand...
...they were so good and so much fun!

...things I (try to) eat every day...
...and I find that I'm much more likely to eat them all if I gather them up in the morning....and just graze throughout the day...
...it's actually a surprising amount of food and calories...
...and it gives me most of the vitamins that I need in a day...but you can see that I'll still need to supplement Vitamin D...but most of us do...not just vegans...and the rest of the items will fill in nicely as I eat a proper protein rich supper...

...W.I.P. Wednesday...
...the Circular Yoke Summer Shirt looks much the same...
...I am done with the increases...so now just some straight knitting until I get to the underarms... ...but I've gotten quite a bit done on the blanket...
....this was the only bit of unfinished knitting in the bag...so I've added it here in what I think will be about the middle of the blanket...
...just knitting one stitch of her knitting together with one of mine... ...and then I'll knit up each side of the little block and when I get to the top...I'll knit across all the stitches again combining one of her stitches with one of mine...

...Over the Weekend...
...we celebrated the Man's birthday in our typical understated fashion...
...I iced the cake while it was still warm...so it's not really very pretty...
...the kiddos and I sang happy birthday...and the Man opened his pressies...
...caramel cake is his favorite...this is Julia's caramel mixed with buttercream icing...it's delicious...and never grainy...
...other things got done over the weekend as well...
...I did the regular shopping of course...
...and we had the annual Pinto Bean supper at the Church...where I totally intended to take some photos...but then got talking and visiting and totally did not...
...and I bought some end-of-season peaches... ...I washed them and sliced them up...but they were less than stellar... ...so I decided to make some peach muffins with them... ...and mashed up the 'mealiest' ones to add to the batter... ...and put the nice slices in the dehydrator... ...and some chopped pieces to add to the batter as well..
...intending to just let them dehydrate for a couple of hours...just to get rid of their juiciness so they'd hold up better in the muffins... ...but then...I completely forgot about them...and they dehydrated overnight...into veritable crispy peach chips... ...and they are so good...sweet and tangy...and so crispy...so much better than the fresh fruit...
...so that was a happy accident...
...I'll freeze the mashed peaches and maybe just add it to smoothies...I love peach mango smoothies...
...but I'm going to just eat these crisps out of hand...

...Vegan Goobers and Raisinets...
...when we were little Daddy would often come home from a trip with small presents for us...we had...Sinclair dinosaur banks...stuffed Monkey lovies that held bananas...Disney tune LP records...big swirled face-sized lollipops...and Goobers and Raisinets...
...which sadly aren't vegan... ...but take some vegan chocolate... ...Bakers is vegan... ...just break up the chocolate... ...and melt it in the microwave for a few seconds... ...get some unsalted peanuts... ...and stir them in... ...and put them on a plate to dry/harden... ...and then do the same with some raisins... ...and you'll have some Vegan Goobers and Raisinets...

...W.I.A.Y. ...
...I started the morning with a small bowl of bran flakes and some vanilla almond milk...
...then I don't know if this was second breakfast or morning snack...but it was delicious...I love avocado toast...
...for lunch I cooked some spinach and carrots on the foreman grill...
...and got some of the Man's cassoulet from a couple of months ago out of the freezer...and I baked some home fries in the oven...

...afternoon snack was some hummus and tomatoes...
...Dinner was tofu, crinkle fries, cucumber, bread, and green beans...and vegan squash casserole...
...we ate kind of late and I didn't have another snack...

...W.I.P. Wednesday...
...work progresses on the Circular Yoke Summer Shirt...
...I've finished the 18 rows of straight knitting and am about to start the increases...
...but I've also started another N.O.A.H. project... ...in the yarn closet there was this bag of yarn and some unfinished pieces of crochet and one of knitting... ...and there was this note..."Donated to the Prayer Shawl N.O.A.H. by Barbara..." ...now Barbara was the great grandmother of a young man in our Parish...so I cast on for a simple afghan using her yarn and pieces for him...not sure if he ever knew his great grandmother...but I thought it might be nice for him to have something that she made...
...I'm just knitting with the white and cream coloured yarn from the bag alternating rows...and adding in a few random stitches of the coloured yarn...some of which matches the pieces she crocheted...much like I did for the Green Afghan...and picking up stitches and knitting around her pieces...of which there are 5...and I'm just going to randomly place them in the white part of the afghan...
...and then I'll do a border...probably not granny squares but some sort of crochet...we'll see when we get the main part of the afghan done...because the border will need flecks of the other colours as well...
...so...now my goal is two rows of the afghan...and two rows of the Circular Shirt...
