
...well, it's actually an alternative to eating other forms of junk food - this recipe uses only sorghum syrup (but molasses would also do) - it satisfies a sweet tooth without reaching for a candy bar...

The recipe is my basic vinegar cake recipe with the flavorings tweaked for great gingerbread...
Fat-free Vegan Gingerbread
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup molasses or sorghum syrup
1/2 cup applesauce
1 cup cold water
1 teaspoon ginger
1 teaspoon cinnamon
Mix all of the above ingredients and then add
2 teaspoons vinegar - stir in quickly
Bake at 350 F until cake tests done.
Makes 1 9 x 9 or 8 x 8 or 12 cupcakes or bake it in a cast iron skillet for authentic Southern-style Gingerbread with a thick and crispy crust - YUM!

I love making healthy baked goods too! In fact, I just baked a batch of Carob Hermits. They're really yummy cookies that are both fat free and sugar free.

MMMM!!! Love that you bake lots too, in my oppinion, baking something sweet is well worth the effort. Us vegans have it tough finding sweets we can consume and even though I do eat lots of sweets, I feel I still eat far less than I did when I was not vegan.
