i was expecting 4 pans worth of "process" from julia. nice - i usually just boil mine - i'll try to put them in the skillet and see if that makes a difference.
I can see how blanching them first makes a difference. I'm harvesting mange tout at the moment and they need only a 'touch' of boiling water before putting them with butter and garlic - just to coat them.
