...Vegan Bubble and Squeak...

...Scout was watching a video where they mentioned 'Bubble and Squeak'...

...and asked if we could make that for supper...
...so we chopped up some leftover tofurkey...
...and cooked some onion...
...and got out some leftover cabbage and Grandma's Mashed...
...then stirred that all together...it doesn't look all that appetizing right now...
...formed into patties...
...and pan-fried in a little Earth Balance and oil...
...flipped 'em when they were nicely browned and crispy...
...and served with a simple salad...with vegan ranch dressing...
...I loved this meal...quick...simple...frugal...delicious...and vegan...what more could you ask for...

  1. I love that you made 'bubble and squeak'. When I was a child living with my Grandmother she made a roast, often a large and stuffed roast ox heart because it was very cheap to buy, on Sunday. She would cook more vegetables than we needed which was usually cabbage and mashed potatoes. These would be mixed together and fried in a frying pan, then turned over so both sides are lovely, brown and crisp. This was served with cold meat - leftover roast - and pickles, usually piccalilli and pickled red cabbage and chutney. These pickles and chutneys were always home made. There were many, many jars of them to liven up the many dull meals we ate!!!!!
