...almost the last of the Vegan Buffalo Mozzarella...

...I realized that I didn't take a photo of the grilled pineapple we had for dessert with our Kabobs Friday night...sorry about that...

...but this is what I did with the leftover grilled pineapple...
...I got a couple of balls of Vegan Buffalo Mozzarella out and used my trusty egg slicer thingy...
...and cubed up the vegan mozzarella just like before when I've made vegan cottage cheese from tofu...
...but I didn't add any other flavorings...
...just a couple of tablespoons of Cashew Cream...
...and it made creamy perfect vegan cottage cheese...
...and this is the only (sad) photo of the grilled pineapple...
...it was delicious on it's own and with the Vegan Buffalo Mozzarella/Cottage Cheese...
