...W.I.A.Y. ...

...dontchyajusluv the decorative way I fold my vegan cheese to make it fit on the muffin...
Breakfast - Vegan Tofu Egg Muffin with Cheese...you can even make your own English Muffins...
...I chopped up some cabbage...
...'cause y'all know I can't go a single day without using my Foreman Grill...
...very yummy...and filling...
...but a couple of hours later I wanted a snack...so I had an apple and some pecans...

Snack #1 - Apple and pecans
...and then AGAIN...before supper I was hungry...this was turning out to be a very snacky sort of day...

Snack #2 - homemade bread with chocolate...I just wrapped a chunk of chocolate with a slice of bread...not heated or anything...it sort of reminds me of pain au chocolate that I had in France...not the same texture...but it's very delicious...I love it...
...and then dinner was leftovers with everyone just making their own bowl or plate of food...I kinda love leftover night...making something out of nothing...but my 'boys' never seem to like it that well...

Dinner - Chickpeas, rice, lettuce and TJ Chili Sauce...
Bedtime Snack - Life Cereal with Sunflower Seed Milk

...I know...I know...another snack...

...this was sort of a crazy day...but some days are just like that...

  1. what a neat day....my day doesn't look anywhere near as interesting as yours. omelette for late breakfast, corn chip and salsa snack mid-day, and pasta with tomato sauce for dinner. was a lazy rainy day - read John Steinbeck's Tortilla Flats in one sitting! weird book.

  2. Oh yes, I do have 'snacks' days! I like to have nuts and dates for the sweetness.

    Friends for lunch today and I made salads and bread rolls. All through I felt something was missing and after everyone had gone I remembered the hummus I made still in the fridge! I made a pizza for dinner with the chickpea flour pancake as a base and the roasted peppers and black bean salad as a topping all finished off with hummus! Delicious.
