...Make your own pickled ginger...

....my jar of pickled ginger was almost empty...I really only use it for sushi...so it lasts a while...
...and the ingredients are pretty simple...so I was wondering if you can pickle your own ginger...
...so I peeled some ginger...
...most of the recipes I found online call for 'young' ginger...not sure...but I don't think my ginger is very young...
...I had quite a bit of peelings...so I'm going to freeze them and use them in tea...I love ginger tea...with lemon...yum...
...and then I got out the mandoline...and sliced the ginger...
...into really thin strips...
...put some vinegar, sugar and water in a saucepan...brought it to a boil...
...and then added the sliced ginger...
...and packed it into a re-used salsa jar...it did turn kind of pinkish...

Homemade Pickled Ginger

5-ish pieces of fresh ginger, peeled
1/4 cup rice wine vinegar
1/4 cup water
1/4 cup sugar

...have you ever pickled ginger?...

  1. This is funny because I never buy this... but i LOVE to eat it at the best sushi restaurant in the world (if you travel to Montréal; go there! https://www.sushimomo.ca/?lang=fr ) And tomorrow is my son's birthday and hi asked for sushis...
    and I wanted to try to copy their creations (because he Loves Sushimomo) (of course, it's impossible!) so I bought this piclked ginger for the first time! Next time... I will make it myself. Thank you!!!

      I love vegan sushi too...but there's very few places around here to get it...so I often make it at home...I've not tried the pickled ginger yet...so hopefully it'll be good the next time I make sushi...I'll let you know...
