...Over the Weekend...

...remember my failed attempt at the peach muffins...
...I tried again...and successfully just dehydrated them enough to hold up in muffins...
...so we had delicious fresh peach muffins for breakfast...definitely the last of the season...
...I did the shopping in two trips...I think I've mentioned before that Aldi is not as close as Food Lion...so I don't always shop there...but I was near an Aldi on Friday...so I popped in and got a few things...
...I didn't have my list...so I just got a few things I happened to remember that we needed...and we've been loving that Cran-Mango juice...it was new to us...they used to only have cran-grape and cran-apple...but now they've got several other flavors as well...have you tried it?...
...so then on Saturday...I did the regular shopping...
...and Harris Teeter had their Organic canned goods on sale...so I picked up several of those...
...like really on sale...half off...
...the only other 'special' thing I got was this Ginger brew...I thought it would be a good fall drink...
...the kiddos went and got their own pumpkins this year...so I have no pumpkin patch photos...and they chose HUGE pumpkins too...
...they spread a couple of plastic tablecloths on the floor and carved away...saving the seeds for me...sweet...
...we got a couple of votive candles out...and they taped a match to a skewer to make it long enough to light the candles in those tall pumpkins...
...Our Girl took advantage of a pre-existing slit in her tall pumpkin to make a sweet smile...and Scout sketched a scary face on his...
...then they carried them outside...on each side of the front steps...
...they are so cute...
...and then we made Vegan Candy Corn...

...exactly the same as last year...except instead of coconut oil...I used Earth Balance...

VEGAN CANDY CORN

1/4 cup clear corn syrup
1/4 teaspoon vanilla
1 tablespoon Earth Balance softened
1/4 cup powdered sugar
a pinch of salt
3/4 cup tapioca flour (plus 2 tablespoons for kneading)
food colour, yellow and red
...I just mixed up the ingredients and kneaded...
...until it was a Play-dough consistency...
...divided into three balls...and coloured two of them...and left one white...
...rolled the dough into three snakes...
...lined them up and pressed them together...
...and cut into little triangles...
...and left them to dry overnight on parchment paper...
...they turned out so shiny and cute...and the Earth Balance was a perfect sub...the creaminess and saltiness that it adds is an improvement...

...then we spent Sunday visiting with dear friends from West Virginia...

  1. I love carved pumpkins so much... It moves me. Dont' know why but I can stant staring at those for minutes! Bravo to the kids for their chef-d'oeuvres!
