One of the Man-Cub's classmates had a small house fire - their kitchen and this little girl's bedroom were destroyed. So his class decided to have a bake sale to raise money to refurnish her bedroom - aren't they a super class? The Man-Cub requested 4 dozen Monster Cookies to take to the bake sale - so we searched on-line for a recipe and found one from Paula Dean that looked unhealthy - er - um - I mean yummy...
...so we veganized it and I think it's gluten free as well...
Paula Dean's Vegan Monster Cookies
Ingredients
3 equivalent EnerG Eggs
2 1/4 cups turbinado sugar
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 12-ounce jar creamy peanut butter
1/2 cup Earth Balance, softened
1/2 cup multi-colored chocolate candies - Koppers
1/2 cup vegan chocolate chips - we make our own Homemade Vegan Chocolate Chips
1/4 cup raisins, optional
2 teaspoons baking soda
4 1/2 cups quick-cooking oatmeal (not instant)
Directions
Preheat the oven to 350 degrees F. Line cookie sheets with parchment paper or nonstick baking mats.
In a very large mixing bowl, combine the EnerG eggs and sugar. Mix well. Add the salt, vanilla, peanut butter, and Earth Balance. Mix well. Stir in the chocolate candies, chocolate chips, raisins, if using, baking soda, and oatmeal. Drop by tablespoons 2 inches apart onto the prepared cookie sheets.
Bake for 8 to 10 minutes. Do not overbake. Let stand for about 3 minutes before transferring to wire racks to cool. When cool, store in large resealable plastic bags.
