This is just a super simple side dish that we make that has a lot going for it...
First of all it uses up some of the potatoes that we have sprouting in our basement - so you get the soft warm texture of potato - then it has the cool crisp juiciness of the fresh tomatos - and then the garlicky creaminess of the ranch dressing - YUM!
Warm Potato Salad
about 3 medium red potatoes - boiled with skins on
a handful of grape tomatoes
1/2 cup ranch dressing
I make one without tofu that we like a lot:
1 cup vegan mayonnaise - I make BRYANNA’S DELICIOUS LOW-FAT VEGGIENNAISE
2 T. soy milk
1 T. cider vinegar
1/4 t. salt
1/2 t. garlic powder
1/2 t. onion powder
A few twists of freshly ground black pepper
1/4 t. dried dill
2 t. dried chives
Just put everything in the blender and mix it up and pour that over the potatoes and tomatoes
