Fat-Free Vegan Applesauce Spice Cake

I used my cute little tube pan to make an applesauce cake...

It turned out so cute and good...

...this is one of Scout's favorite cakes and I often make it as Cupcakes with frosting or as muffins for breakfast without...

This time we had it warm with a little Soya-Too whipped topping - so good...

Fat-Free Vegan Applesauce Spice Cake

1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sugar
1/2 cup applesauce
1 cup cold water
1/2 teaspoon ginger
1/4 teaspoon cloves
1 teaspoon cinnamon

Mix all of the above ingredients and then add

2 teaspoons vinegar - stir in quickly

Bake at 350 F until cake tests done.

Makes 1 9 x 9 or 8 x 8 or 12 cupcakes or 1 demi-tube pan.

  5. You know me, I like fat and bacon (otherwise I'd get kicked out Indiana), but there is little more than I like more than an applesauce cake. Yummy. I've never tried a spice applesauce cake. Don't tell the Hoosiers, but I think I'll try a vegan recipe!

  7. Fat free cake that tastes good. That is what I need. I'm going to print this recipe out and bake it for the grils, next time we catch up. Wont tell them it's fat free either.
