...we have a Christmas Party to attend tomorrow evening...so there will be no Movie Night tomorrow...
...so we both (just the 2 of us...again) cleared our calendars for some quality time last night...
...the Man looked up a new (to us) recipe...that we happened to have all of the ingredients for...Cacio e Pepe...
...so we set about making a vegan version...
...first we made some noodles...
...then put some Earth Balance in a pan...and got it hot...
...ground a tsp. of black pepper and added that to the Earth Balance...
...let it sizzle a bit until it was fragrant...
...then added the noodles...
...and some of the cooking liquid...
...added a bunch of the vegan parmesan...
...and gave it all a stir...and it was done...
...I was amazed at how creamy the sauce was...
...and this side dish was definitely the star of this simple meal...which included Brussels Sprouts which are not pictured for some reason...oh well...they weren't the star of this show anyway...
...so simple and so good...
...and the movie was the Man's pick...he seems to be in a classic movie rut lately...and he chose The Long, Hot Summer...and it was good...

how nice!! we watched "Hondo" with the McCraw clan when they were here over Thanksgiving....we have several "classics" taped, just haven't watched them lately!

Looks good, is that tofu I see? Tonight I am making a root vegetable stew with dumplings, it is smelling good. Vegetables will be greens.
ReplyDeleteWe have all the Christmas ads on at the moment and for the first time I realise just how many of them revolve around meat. It has given me a shock and I am happy that I am now a vegan.
