...we had a Christmas Party to attend last night...and I needed to take some hors d'oeuvres...
...I think hors d'oeuvres type parties are usually pretty easy for vegans anyway...
...and we decided to take a 7 layer dip...and chips...
...so I mixed some seasoning into some refried beans for layer 1...
...then mashed up some avocado to make some guacamole...
...and it was handy to have the little cubes of frozen lime juice for that...
...just thawed it out and poured it over the guac...
...and spread the guac over the beans for layer 2...
...I mixed up some vegan sour cream from silken tofu (4 oz.)...red wine vinegar (2 tsp.) and lemon juice (2 tsp.) with 4 oz. of my new Vegan Mayo...it was really good...
...and poured that over the guac for layer 3...
...layer 4 was some organic salsa...
...chopped lettuce was layer 5...
...then I got out Grandma's Veg-O-Matic and made quick work of slicing some olives...so that was layer 6...
...and layer 7 was just some diced tomatoes...
...you can almost see the 7 individual layers...
...just paired with some organic tortilla chips...
...and then I used the remaining silken tofu to make a Tofu Chocolate Mousse Pie...and if y'all haven't tried that one...you really should...it's quick and easy and delicious...and non-vegans never (really never) even guess that it's vegan...
