I've been really busy with work and scouts and various boards and church and there's a definite temptation to go the 'fast food' route at lunch - I don't mean McD's of course - but prepackaged/processed food...
...so I need to take just a little bit of time and fix something fresh and nutritous - this is what I came up with today. I had baked the tofu strips previously - so it only took a few minutes to assemble this delicious salad - and I'm loving the Neumann's Own Sesame Ginger dressing...

yum, i've been doing your baked tofu strips - i just soak them in soy sauce. i've been adding them to my stir-fry at the last minute. very good and simple. love, k

ReplyDeleteI love that dressing, too. Looks like a yummy lunch. I sadly had to return Alice Waters "The Art of Simple Foods" cookbook to the library today (I kept renewing it over and over!)...it's a great resource.
