Pancakes for a crowd - of hungry boys...


Scout had some friends over and I didn't know what to serve for a 'snack' - Scout said he wanted pancakes - OK I can do that...

...Did you know that four 10-11-12 year old boys can eat 18 pancakes?

2 cups Bread flour
3 T Turbinado Sugar
3 teaspoons baking powder
1/2 teaspoon salt

1/2 cup flax seed goo - just boil 2 T of flax seeds in a 1/2 cup of water and strain
1/4 cup oil
2 cup soy milk - 1 T vinegar

Mix the dry ingredients - mix the wet ingredients and then mix together quickly - don't stir it too much - Pour onto a hot griddle and flip the cakes when the tops are all covered with bubbles...

  2. drop scones or scotch pancakes - in New Zealand they are called pikelets - delish!

    Best topping is butter and sugar - yum!

  3. hey, funny you should talk about pancakes. a friend (longtime pittsboro resident) that grew up in england - was talking to me the other day about one of her first visits to america. she said her friends mom made pancakes for them and she was thrilled....seems like pancakes were a "special occasion" dish in her home. she now has young kids and said she makes them pancakes often now.

  4. Mmmmm! They look so good! I never thought of pancakes as a snack food but why not? Nature Boy's sister always makes them for her children in these cute pans that give them shapes and smiley faces and such, I think I will keep my eye out for one on sale...

  6. I've got to try these blueberry pancakes! :) I've been seeing you mention "flax seed goo" for awhile now but I wasn't exactly sure how to make it. Glad you mentioned how to make it today. Will try the "flax seed goo" in muffins tomorrow.
