...Leftover Mashed...Potato WAFFLES...

...this is not really a recipe...but I wanted to show y'all the fun thing we did with our leftover mashed potatoes...

...I often make potato pancakes with my leftover mashed...

...I just add a little bit of flour and some chopped onions...and then I just pan fry them in a little Earth Balance...

...I love potato pancakes...and what I love most about them is the crust...of course...

...and so I was just thinking...how to get more crust...the waffle maker...of course...

...so delicious...

...crispy potato-y crust...and soft potato-y middle...really really good...if you have a waffle maker and some leftover mashed potatoes...I definitely recommend this...
