......W.I.A.Y...and a Vegan Shepherds Pie...

Breakfast
...started off the day with...
...some 5 grain porridge (with cinnamon) and an orange...and coffee with cashew milk creamer...

Lunch
...vegan egg-less salad sandwich...and tomato soup...

Dinner

...and then for dinner...Scout suggested Shepherd's Pie...and since it's been a really (really) long time since I've made it...we all thought it was a good idea...
...and it's pretty simple to make a vegan version...I just mixed up some TVP crumbles (burger style) some frozen mixed veg...and an onion...
...then I got a container of sautéed (Julia Child style) mushrooms from the freezer...
...mashed up some potatoes for Grandma's mashed...of course...
...made a quick gravy (or soup if you will) with the mushrooms...
...and stirred that into the vegetable mixture...
...transferred it to the casserole dish...
...topped with the spuds...
...and carefully spread it around...
...it doesn't have to be perfect...and I know a lot of people fluff theirs up with a fork...
...baked until golden and bubbly...
...just served with a salad...
...it's kinda fun and oddly satisfying to break into crusty creamy potato topping and scoop up a steaming helping...
...oh...and a roll...
...it was a delicious supper...
