...Vegan Chocolate Pudding...for Pi(e) Day 3.14...

...just celebrating another day...as we try to celebrate each and every day...we made these super simple...and super yummy little pies...

...and don't you think that simple wholesome homemade food is just better than the prepackaged chemical processed kind?...me too...

...with just a few simple ingredients that we already had on hand...we whipped up some sweet little tarts...

...I made some little tart shells using my favorite VEGAN PÂTE BRISÉE from the Vegan Version...

...I cut little fluted edge circles...

...and shaped them over the BOTTOMS of my muffin tin...neat idea eh?...

...then I mixed up the pudding...dry ingredients in the pot...

...give it a quick stir...

...liquid ingredients...

...pour them in...

...and also give that a quick stir...

...then cook...over medium heat...stirring constantly...until thick...it doesn't take long...really less than 5 minutes...

...then spoon the pudding into the little shells...

...now wasn't that easy...

...and just fun...

...and I love this video so much...I know I shared the short version with you last year...but I'm just mathematically nerdy enough to love it enough to share it again...the full version this time...

Super Easy Vegan Chocolate Pudding and PI(e) Filling

Mix together in a saucepan:
1 Tablespoon cocoa
1 Tablespoon cornstarch
1 quick sprinkle of salt
1 Tablespoon sugar

Then add:
1 cup soy milk
1/4 teaspoon vanilla

Stir and cook over medium heat until thickened...It will make about 2 half cup servings...

...It's quick and easy...and you know all the ingredients...and it will be a fun little afternoon snack...

    I really don't like saying this,but I am just trying to make it through the day. With the pollen and the time change I really do not feel well today. Hopefully I won't waste too much of this day I have been given. :)

  4. those look great! I recently saw where they used cookie dough placed over the bottom of a muffin tin to make cookie cups.
