...2.3...Over the Weekend...

...ok...first of all (haha)...I can't believe it's February...
...we got to spend some quality with this sweetie...
...this really is what she is like all the time...unless she is asleep...
...I did the weekly shopping on Saturday...and since I was going to be gone right at lunchtime...I packed a little snack to have in the car...some crackers leftover from the 21st birthday party last week...so...I'll show you those little tidbits tomorrow with Julia...
...I've finally used up all of the frozen lemon juice from the South Carolina lemons my friend gave me before Christmas...so I needed to restock...
...the red cabbage is for an upcoming recipe with Julia...the baking soda is for my no-poo shampoo...and the two different jars of olives is because I couldn't remember which ones we like better...one is definitely better...and I'll probably use the other one for pizza...haha...
...so I cooked up the lone yellow squash packaged in with the zucchini in the Foreman Grill...fat free 'fried' squash...it's yummy...I just snacked on it...
...as I did some more food prep for the coming week...my cast iron biscuit pan that Mom gave me has 7 cups...so I filled four with cornbread and three with biscuits...
...and while the oven was going...I baked some tofu...
...and when the squash was finished I made one of those huge sweet potatoes in the Foreman Grill...
...and also while the oven was on...I made some carrot cake muffins...they're so handy for our rushed Sunday mornings...
...but apparently I didn't take a photo of them after they were done...haha...
...and then the Man left to drive to New Mexico with Our Airman...he's pulling a trailer with Our Airman's car on it...so as a special treat for me...the Man agreed to lunch at Sub Station II...so I packed some vegan deli meat and cheese to take with us...
...it was so much fun...just like we were back at university...
...I even picked up a copy of The Free Times...so much fun...
...this is my vegan sammie...they are so nice...when you order a veggie sub...they change their gloves and knife without you even asking...so nice...
...so then I added the vegan cold cuts I had brought...and we had a nice afternoon date...

  1. You're right, she is adorable!! Food looks like fun too. I never thought about putting cornbread and biscuits in the pan at the same time!!! (I left that heavy pan at home so I can't do it here). Love, K
