...I had gotten a couple of long skinny purple eggplants at the neighborhood vegetable stand...
...so I dredged them in flaxseed gooo and flour...
...and Griddler-ed them to a nice crispy golden brown...
...and we had them with yellow-eyed beans...collards from the freezer...and a tomato and cucumber also from the neighborhood stand...(and cornbread not in the photo)...beans/greens/cornbread is definitely one of my favorite meals ever...
