...10.5....Over the Weekend...

...I'll start with the REALLY BIG NEWS first...
...the Airman and his wife are expecting a new little one...next spring...these are the very first images of that little peanut...who looks quite comfy...
...I did the weekly shop...nothing special...nice avocados though...
...I cooked the last of the fresh okra that we were gifted...look at these cute little baby okra...so delicious...
...and we got one more bag of squash...probably the last this year...
...I did some food prep for the week..I made a big batch of my favorite Tabouleh...
...I made my two ingredient probiotic biscuits...but shaped them as scones...and while the oven was on I baked some tofu...
...I got some peaches and frozen mango out of the freezer...
...and whizzed that into some vegan two ingredient probiotic yogurt...
...so creamy...and I love peach yogurt...the mango makes it extra sweet...
...I got three pints of yogurt...ready for the week...
...and finally I made some chocolate tofu pudding...just silken tofu...cocoa and sugar...it's such a nice 'dessert' to have on hand...

~Wishing you a lovely start to your week!

    1. Hi Éphée,
...I almost always 'fry' it now using my Foreman Grill...I just slice it up - I always toss that little bit at the top where the stem attaches - and put it into a bowl...and lightly dust it with cornmeal...and then I put it on parchment paper on the Foreman Grill...but it you don't have one of those...I used to always just pan fry it in a little bit of oil...on fairly low heat until it's brown and crispy...

This one shows how I cook it on the Foreman Grill:

This one too...lots of definition of the finished product:

...and this one shows how I (used to) pan fry it...

...about the only other thing I use it for is to put it in vegetable soup...I love it like that...but other than that...it's way to slimy for me...haha
      Good luck with your okra...
      ~Have a lovely day!
